Our dough is always crafted from scratch, undergoing a 24-48 hour fermentation process to develop its delightful flavour and create a soft, airy crust with a slight char (leopard crust) from cooking at high temperatures above 400c. We carefully select our ingredients, blending Italian and locally sourced products like chutneys, jams, honey, and oils.
